These ricotta latkes are delicious topped with fresh fruit or thawed frozen fruit.
In a large bowl, mix all ingredients together until you have a thick batter.
Lightly grease skillet and heat over medium heat. Spoon 1-2 tablespoons of batter into hot skillet. Spread the batter into a thin circle.
Fry each latke for 2-3 minutes on each side until golden brown. Reduce heat if the outside browns faster than the inside cooks. Serve warm.
